how do i convert iTunes playlists into .fdl playlists that can be used in futuredecks express?

You can not do that.
However I think you can just use the add button to add an iTunes list directly.
You can also convert an iTunes list to M3U format (using some other software, can't recommend anything) and then import the M3U list inside FutureDecks Express.

Also, note that the FutureDecks DJ or FutureDecks DJ pro version have both direct iTunes integration (and the upgrade price is pretty low).
